Malpua is another traditional Indian sweet recipe. You can call it a sweet pan cake too. It is mostly made during the festivals like Holi or Diwali. It can be served with rabdi or as it is garnished with some dry nuts. It tastes just awesome. Here the measurements gives are just perfect to make malai malpua. Ingredients:
• 250 gm Khoya / Mawa
• 1 cup Maida
• 1 cup Milk
• 1 cup Sugar
• 1/2 cup Water
• Cardamom powder
• Oil for frying

Method:
• Grate the khoya finely.
• Strain maida in a bowl and add milk.
• Mix well taking care no lumps of maida should be formed.
• Add grated khoya and mix everything well together to make smooth batter.
• You can add more 2-3 tsp milk if you feel the mix mixture is too thick.
• For making sugar syrup take sugar and add water, cardamom powder in a pan.
• Instead of cardamom powder, add pods so that the color of syrup won’t change.
• Mix well and let the sugar melt on high heat.
• When sugar melts and the mixture boils well reduce the heat to low and simmer for another 4-
5 minutes.
• The syrup should have consistency like gulabjam syrup.
• When the syrup turns a little sticky, turn off the gas.
• Heat up oil on low heat and drop a ladleful batter into the oil.
• The oil should not be too hot.
• Fry malpua well until it gets nice golden color from both sides.
• When lower side gets nice, even golden color, flip it over and fry well from other side too.
• When other side too gets nice golden color take the malpua out, drain excess oil and transfer
into a dish.
• Drop hot malpua into hot syrup and coat syrup well from both sides.
• Transfer the malpua into a dish and malpua is ready.
• You can make around 20-25 medium size malpua from the given proportion.
• You can store malpua for about 2-3 days.
