कोर्मा
• १/४ कप / ५० ग्रॅम खोवलेलं ओलं खोबरं

Ingredients:
Puri
• 2 cup / 300 gm Wheat flour
• 1/4 cup / 50 gm fine Rava
• Salt to taste
• A little less than 1 cup / 200 ml Water
• Oil for frying
Veg Korma
• 1/2 cup / 50 gm grated fresh Coconut
• 2 Garlic cloves
• Ginger knob
• 10~12 Cashew nuts
• 1 tsp white Sesame seeds
• 1/4 cup / 50 gm Curd
• 1/4 cup / 50 ml Water
• 4 tbsp Oil
• 1 tsp Cumin seeds
• 2 Bay leaves
• 3 finely chopped Onion
• A pinch of Salt
• 1 tbsp Kitchen king masala
• 1 tbsp Coriander powder
• 1 tbsp Red chili powder
• 1/4 tsp Turmeric powder
• 1 tsp Sugar
• Cauliflower florets
• Chopped French beans
• Fresh Peas
• Sliced Carrot
• Chopped Potato
• Water as needed
• Salt to taste
• Chopped Capsicum
• Paneer cubes
• 1 tbsp Kasuri methi
Method:
• Mix wheat flour, rava and salt well together and add a little water at a time to knead semi stiff
dough.
• Spread a little water on the dough and cover it.
• Rest the dough for at least 30 minutes.
• Knead the dough well once.
• Add a little oil and knead the dough well.
• Take a small portion form the dough and roll it into a smooth lati.
• Spread a little oil on the rolling board and place the lati on it.
• Roll puri from it.
• Heat up oil on medium heat in a pan.
• When the oil is hot enough, drop puri into it.
• Press the puri a little and fry well until lower side gets nice golden color.
• Flip the puri over and fry well from other side until it gets nice even golden color.
• When both sides are fried well, take the puri out, drain excess oil and transfer it on a wire rack.
Veg Korma
• For making masala for veg korma blend fresh coconut, garlic, finger, cashew nuts and sesame
seeds into as fine paste as possible and add curd and water.
• You can soak dry coconut slices in water for about 15-20 minutes and use them in place of fresh
coconut.
• Blend everything into as fine puree as possible and masala is ready.
• Heat up oil in a cooker and add cumin seeds and bay leaves.
• When cumin seeds splutter, add onion and salt and fry well until it gets golden color.
• Add the blended masala and fry well.
• Add kitchen king masala, coriander powder, red chili powder, turmeric powder and sugar and mix
everything well together.
• Add cauliflower, French beans, fresh peas, carrot and potato and fry everything well together for
about 2 minutes.
• Add water and salt and mix well.
• Close the lid and cook on medium heat 1 whistle.
• Open the lid and mix well once.
• Turn the gas on and add capsicum.
• Mix well and simmer the bhaji for just about 5 minutes.
• Add paneer and kasuri methi and mix well.
• Simmer the korma for just about 2-3 minutes and turn the gas off.
