INGREDIENTS:

BATTER:
1 cup gramflour/besan
1/2 cup plain yoghurt
1/4 cup water
1/4 tsp salt or as per taste
1 tbsp oil
2 tsp sugar (powdered)
1/4 tsp turmeric powder
1 tsp ginger green chilly crushed/paste
1/2 tsp baking powder
1 tsp fruit salt/eno

TEMPERING:
1 tbsp oil
1 tsp mustard seeds
10-12 curry leaves
1/8 tsp asafortida
2-3 slit greeen chillies
1/2 cup water
1 tsp sugar or as per taste
fresh corainder to garnish

  • Hey Kanak(nice name BTW), dhokla looks great;=) I wanted to try it right away, but I don't have any Eno. Is there a replacement for Eno?? Extra baking powder may be? Lemme know at your convenience and thanks for a great recipe!! I can't buy dhokla from anywhere near me; although, they'd sell it on the weekend at the grocery store for $4.99/lb (pricey ha & they'd make it heavy by adding extra sugary water on top and totally ruining the taste in the process). Anywho, I can make it at home now….CAN'T WAIT….thx again!

  • Fantastic recipe. I had to use Andrews salts in place of Eno as Sainsburys had never heard of Eno, worked just the same. Also, added 1/2 cup semolina as I'd seen it some where else, really great recipe though. Thanks for sharing x
