Ingredients –
250gram fresh green chana
200gram sugar
125gram khoya
Chopped nuts
50-75gram Ghee
Method –
Wash and clean fresh green chane, transfer chane in a mixer jar and prepare a fine paste, if needed add 1-2tsp water.
Add chana paste and 1 tbsp ghee in a heavy bottomed wok. Roast on medium flame and add gradually ghee and roast till the chana paste become dry or grainy. Add khoya and roast on low flame for 5 minutes. Switch off the flame and keep aside.
Add sugar and 50ml water in a pan, allow to melt sugar and prepare a thick ball consistency sugar syrup. For perfect sugar syrup consistency place a drop of sugar syrup on a plate, if it not spread or it will remain in a ball shape, our sugar syrup is ready, add green food colour if you wish and mix.
Mix sugar syrup in roasted chana paste and mix nicely, spread in a greased thali or mould. Spread evenly, garnish with chopped nuts and keep aside for 2-3 hours. After 3 hours cut in square shape with the help of a knife and store in fridge for a week.
