Ingredients:
– 500g-1Kg chicken (with bones for best flavor, or boneless)
– 2 onions* finely chopped
– 2 tomatoes, finely chopped (or 1 tbsp tomato paste)
– 1 tbsp ginger-garlic paste (or 4 cloves garlic + 1″ ginger, crushed)
– 1 green chili, slit (optional)
– ½ tsp turmeric powder
– 1 tsp red chili powder (adjust to taste)
– 1 tsp coriander powder
– ½ tsp garam masala
– 1 tsp cumin seeds
– 2 tbsp oil (or ghee for richer taste)
– Salt* to taste
– Fresh coriander leaves, chopped (for garnish)
1️⃣ Tempering (Tadka):
– Heat *oil/ghee* in a pot. Add *cumin seeds* (and bay leaf + cloves if using). Let them sizzle for 5 sec.
2️⃣ Onion Base:
– Add *chopped onions, sauté until golden brown (~5-6 mins).
– Add *ginger-garlic paste* and *green chili*, fry for 1 min.
3️⃣ Spices & Tomatoes:
– Add *turmeric, red chili powder, coriander powder, and salt. Mix well.
– Add *tomatoes*, cook until mushy (~5 mins).
4️⃣ Cook the Chicken:
– Add chicken, mix well to coat with masala.
– Cover and cook on *medium-low heat* for 15-20 mins (stir occasionally).
– If needed, add *¼ cup water* to prevent drying (more if you want gravy).
5️⃣ Final Touch:*
– Sprinkle garam masala* and *fresh coriander.
– Simmer for 2 mins, then turn off heat.
