Ingredients
• ½ kg potatoes
• 3 tbsp oil
• 1 tsp mustard seeds
• 1 tsp chana dal
• 2 onion (finely chopped)
• 2 green chilies
• 1 spring curry leaves
• 1 tomato (finely chopped)
• ½ tsp red chili powder
• 1 tbsp ginger garlic paste
• Salt as required
• Coriander leaves for garnish

For masala powder
• 1 tbsp coriander seeds
• 1 tsp fennel seeds
• 1 tsp peppercorn
• 1 tsp cumin seeds
• 1 tsp chana dal
• 1 tsp urad dal
• 7 red chilies
• ¼ tsp fenugreek seeds

Method

1. Wash the potatoes cut them into cubes with skin. Add little turmeric powder, salt with required water. Enough to cook potatoes upto 80%. Don’t overcook. Keep aside.

2. Dry roast the ingredients above said masala. Grind it to a coarse powder. Set aside.

3. Heat oil a pan. Once it’s hot, add the mustard seeds and let them crackle. After that, add the chana dal. Fry till the dal turns light golden.

4. Then add chopped onions, green chilies, curry leaves and ginger garlic paste. Sauté until onion turns golden brown.

5. Now add tomato, red chili powder, 2 tbsp fresh masala powder and required salt. Sauté well until tomato are mushy.

6. Now add boiled potato fry it all together till the potatoes are done and coated with the masala. Do not cover the pan while cooking. Add more oil and cook on a medium flame. This will make the potato roast crispier.

7. Leave it for 5 minutes on medium flame. Keep stirring at regular intervals to ensure even roasting. Remember, in the end, the potato cubes must hold their shape and not become mushy. Do not overcook them.

8. Keep stirring so the potatoes are evenly cooked. Finally garnish with chopped coriander.
