**Pork Chilli Recipe**
Ingredients:
**For Boiling the Pork:**
* 3 kg pork
* 6 large onions, sliced
* 8 green chillies
* 10 cloves (lavang)
* 12 black peppercorns
* 4–5 bay leaves
* vinegar
* 2 tsp turmeric powder
* Salt to taste (adjust accordingly)
* *No added water*

**For Marination:**
* Boiled pork (from above)
* 2–3 tbsp Kashmiri red chilli powder
* Soy sauce (as needed)
* Tomato sauce (less quantity)
* Chilli sauce (to taste)
* Green chilli sauce, (to taste)
* Vinegar (to taste)
* Lemon juice (to taste)

**For Onion Mix:**
* 8 medium onions, cubed
* Chilli powder (to taste)
* Soy sauce (as needed)
* Vinegar (as needed)
* Green chillies (graham chilli), chopped
* Chilli sauce (to taste)

**For Final Cooking:**
* Add sliced ginger, garlic, and green chillies.
* Green chillies, sliced
* 2–3 capsicums, cubed
* Pork fat (from frying)
* Light water or stock (from the boiled pork)

Method:
**1. Boil the Pork:**
1. In a large heavy pot, add pork, sliced onions, whole spices (chilli, cloves, pepper, bay leaves), vinegar, turmeric, and salt.
2. *Important: Do not add water.*
3. Cook the pork on medium heat until it’s tender and fully cooked, releasing its own juices.
4. Once done, strain and **save the broth**. This will be used later.
5. Keep the pork aside.

**2. Marinate the Pork:**
1. In a large bowl, add the boiled pork.
2. Mix in Kashmiri red chilli powder, soy sauce, tomato sauce (just a little), chilli sauce, sliced green chillies, vinegar, and lemon juice.
3. Mix well and set aside to marinate for at least 20 minutes.

**3. Prepare Onion Mix:**
1. In another bowl, combine cubed onions, chilli powder, soy sauce, vinegar, chopped green chillies (graham), and chilli sauce.
2. Mix thoroughly and set aside.

**4. Fry the Pork:**
1. Heat a wide pan or tawa.
2. In batches, lightly fry the marinated pork pieces until browned.
3. Keep the pork fat rendered in the pan — **do not discard**.

**5. Cook the Final Dish:**
1. In the same pan with pork fat, fry the prepared onion mixture until slightly golden.
2. Add a splash of the saved pork broth (light water) to deglaze the pan.
3. Add sliced ginger, garlic, and green chillies.
4. Once aromatic, add the fried pork and mix well.
5. Add cubed capsicum at the end to retain some crunch.
6. Stir everything together and cook until flavors blend well.

Your spicy, flavorful **Pork Chilli** is ready! Best enjoyed with rice, roti, or just on its own with a cold drink.
